To cook, preheat your oven to 375 degrees and combine eggs, heavy cream and mozzarella in a medium bowl while seasoning with red pepper flakes, salt, and pepper. Heat a skillet over medium heat and add olive oil and minced, shallots and garlic and cook until soft. Add spinach to the mixture and cook until wilted. Pour the egg mixture into the skillet and garnish with mozzarella cheese before transferring to the oven for 12 minutes. Enjoy!
